Considered by connoisseurs to be the apotheosis of tea, white tea is the least processed of all and thus the closest tea comes to it's pure natural state.  Significantly lower in caffeine, it is becoming increasingly popular with it's light, sweet taste and with minimal processing retains  higher levels of antioxidants.
